Leftover Turkey? Make This!

We're a fan of the slow-cooker stews, like the chili we made a few weeks ago. With so much leftover turkey, we pulled off this amazing, organic stew - a modified version of Hobo Stew. It's tasty stuff, and hearty enough to be the whole meal!


POST-TURKEY DAY STEW

16 ounces leftover turkey
1 cup diced onion
2 cups diced celery
2 cups diced carrots
3 cups diced raw potatoes
1 can (14 ounce size) cream of mushroom soup
1 can (14 ounce size) tomato soup
1/3 cup hot water
2 teaspoons dried parsley flakes
1/8 teaspoon black pepper

**put all in slow-cooker on high 4-5 hours
